WINE AND MUSHROOM SAUCE

60 g (2 oz) butter

Wine and Mushroom Sauce BBQ Recipe

1 onion

60 g (2 oz.) mushrooms

2 rashers bacon

15 g (1/2 oz.) butter, extra

3 tablespoons flour

1 table spoon tomato paste

2 ½ cups water

3/4 cup dry red wine

1/4 tea spoon thyme

1/4 tea spoon mixed herbs

Salt and Pepper

Melt butter in frying pan and add the peeled and chopped onion, the sliced mushrooms and chopped bacon.

Saute until onion is transparent then remove from pan.

Add extra butter to the pan, add flour and stir until smooth and well browned.

Add tomato paste and gradually add water and wine, stir until smooth, and stir until sauce boils and thickens.

Reduce the heat and add thyme, mixed herbs, salt and pepper, and simmer covered for 30 minutes.
