WATERMELON
SALAD

kg (4 lb.) watermelon
4
small onions
2
tablespoons oil
2
tablespoons white vinegar
1
tea spoon sugar
2
tablespoons chopped mint
1/4
cup dry white wine
Peel
watermelon, remove seeds and chop into 2.5 cm (1 in.) cubes.
Peel
onions, slice thinly and combine with watermelon.
Combine
in screw-top jar oil, vinegar, sugar, mint and wine, shake well.
Pour
over watermelon, combine well and then refrigerate until ready to serve.
Serves
6 to 8.
