TROUT
WITH ALMONDS RECIPE

whole trout (or other whole fish)
2
tablespoons chopped parsley
Flour
1
tablespoon lemon juice
Salt,
pepper
60
g (3 oz.) butter
1/3
cup slivered or flaked almonds
Toss
trout in flour seasoned with salt and pepper.
Heat
butter in pan, add the trout and cook gently for approximately 5 minutes each
side.
Remove
the trout from pan; keep warm.
Add
almonds to pan and sauté until golden brown then remove from pan.
Add
parsley and lemon juice to remaining butter in pan (add an extra 30 g [ oz.J
butter, if necessary), and stir until combined.
Put
trout on serving plates, sprinkle with almonds and spoon over the
parsley-butter.
