CHICKEN WITH CHILLI SAUCE RECIPE

whole chicken breasts
2
cloves garlic
1
small green pepper
1
small red pepper
1
teaspoon Sambal Oelek ( An
Indonesian chilli sauce, available from most supermarkets and large food
stores)
1/2-teaspoon
salt
1-teaspoon
sweet sherry
1/2-teaspoon
corn flour
Pepper
Oil
for deep-frying
1-tablespoon
oil, extra
SAUCE
1/2-cup
chicken stock
1
/2 teaspoons corn flour
Remove
the skin from chicken breasts.
With
a sharp knife gently remove the chicken meat from each halt of each breast,
giving 4 chicken pieces.
Cut
the chicken meat into 1 cm (1/2 in.) strips.
Combine
the meat with salt, sweet sherry, corn flour and pepper, mix well and stand
for 30 minutes.
Deep-fry
the chicken pieces in hot oil until just changing colour then drain well.
Crush
the garlic, seed the red and green peppers and cut into 5 mm (1/4 in.) cubes,
add corn flour and chicken stock and mix well.
Heat
the extra oil in pan.
Add
garlic, red and green peppers and Sambal Oelek. and cook gently for 2 minutes.
Add
the sauce. Stir until sauce boils and thickens then add the chicken and mix
well.
