g (1 lb.) lean pork chops

green pepper

canned pineapple slices

corn flour, extra

cloves garlic
SAUCE

tablespoons white vinegar

tablespoons sugar

tablespoons water

tablespoons tomato sauce

teaspoons corn flour
Combine
soy sauce, egg yolk and corn flour into a bowl and stir well.
Remove
the rind from the chops and cut chops into 2.5cm (1 in.) cubes.
Place
cubes into soy sauce mixture and stir until the meat is coated. Cover and
leave for 1 hour; stirring occasionally.
Combine
all the ingredients for the sauce and mix well.
Seed
the red and green peppers and cut into 2.5cm (1 in.) slices.
Cut
the pineapple rings into quarters.
Add
extra corn flour to pork mixture and mix until the pork is well coated.
Heat
the oil in a pan and deep-fry the pork until golden brown and cooked through
(about 7 minutes) then drain well.
Pour
off the excess oil, leaving 1-tablespoon oil in pan:
Add
the crushed garlic, cook for 1 minute and remove from pan.
Add
the red and green peppers and pineapple quarters to the pan and cook quickly,
stirring constantly for 3 minutes, then add the pork and sauce and stir until
sauce boils and thickens.
Serves
