HOT STEAK PIE RECIPE
750
g (11/2 lb.) minced steak
11/2
cups fresh breadcrumbs
2
onions
1/4-cup
water
2
beef stock cubes
1-teaspoon
soy sauce
2
tablespoons tomato sauce
2
tablespoons finely chopped parsley
Salt,
pepper
1
egg white
Combine
and mix well the minced steak, breadcrumbs, peeled and chopped onions, water,
crumbled stock cubes, soy sauce, tomato sauce, parsley and salt and pepper:
Roll
2/3 pastry to line the base and sides of 18 cm (7 in.) spring form pan.
Brush
base and sides of the pastry with slightly beaten egg white.
Put
meat mixture into pastry case.
Roll
remaining pastry and cut to fit the top of pie.
Press
the pie edges too seal and trim off any excess.
Cut
a cross in center of top and gently fold back four peaks.
Decorate
around peaks with leaves cut from remaining pastry.
Brush
over with egg white.
Bake
in hot oven for 20 minutes then reduce heat to moderate and cook for a further
1 hour.
Allow
to stand for 10 minutes before turning out.
PASTRY

1/2 cups plain flour
1-teaspoon
salt

egg-yolk

g (3 oz.) dripping
½ cup water
Sift
flour and salt into bowl - make a well in center and add an egg-yolk, then
cover with some of the flour.
Put
dripping and water in saucepan, heat gently until dripping melts, then
increase heat to bring to boil.
Pour
the boiling liquid into flour and stir quickly until mixture becomes stiff-
then use the hand to complete the mixing.
Knead
well until the pastry is smooth.
Shape
it into ball, cover, and allow it to stand 30 minutes.
