SPINACH
OMELETTE RECIPE
About
285 calories per serve:
1-tablespoon
flour
4
eggs, separated
3/4-cup
milk
¼
- teaspoon salt
Blend
flour and milk until smooth then stir over a low heat until slightly thickened
- about 3 minutes.
Remove
from the heat and cool a little.
Add
beaten egg-yolks gradually while stirring constantly.
Fold
in stiffly- beaten egg whites and salt.
Pour
into a greased large frying pan and allow to set over low heat 3 to 4 minutes.
Place
under hot griller to brown top.
Lift
cooked omelette on to serving dish and spread over the hot filling (see
below).
Fold
omelette in half and serve immediately.
Two
individual omelettes can be made, if desired.

g (10 oz.) packet frozen spinach

teaspoon lemon juice
Pinch
nutmeg

tablespoon grated cheese
Allow
the spinach to thaw then combine all the ingredients into a saucepan and heat
gently.
