STEAK RECIPE

g (1½ lb.) fillet steak in one piece
½ cup water
1
teaspoon dry sherry
2
tablespoons soy sauce
1-tablespoon
oil, extra
3
tablespoons corn flour
Oil
for deep-frying
SAUCE
2
tablespoons tomato sauce
3
teaspoons sugar
1
teaspoon Worcestershire sauce
2
teaspoons dry sherry
2
teaspoons corn flour
½
cup water
Trim
all the fat and sinew from meat and slice meat into 5 mm (% in.) slices.
Gently
flatten meat with a meat mallet or rolling pin.
Put
meat into a bowl, add soy sauce, corn flour, water and dry sherry, mix well,
cover and marinate for 4 hours.
Add
extra oil to the beef, mix until meat is well coated.
Heat
the oil in the pan, add half the beef, deep-fry until just cooked
(approximately 3 minutes) then drain.
Repeat
with remaining beef.
Combine
tomato sauce, Worcestershire sauce, corn flour, sugar, dry sherry and water in
small saucepan and cook over a low heat until the sauce boils and thickens,
stirring constantly.
Pour
over the beef.
