small cutlets –Cut into 4 sets of 2 cutlets (see photo)
4
slices bread (approx. 5mm/ 1/4 in. thick)
2
teaspoons dried rosemary
I
clove garlic
1
teaspoon dry mustard
½
cup chopped parsley
½
cup lemon juice
Remove
the crusts from bread and crumble the bread into fine crumbs.
Add
rosemary, crushed garlic, mustard, parsley and lemon juice.
Trim
the fat from cutlets and pat the crumb mixture along back of each pair of
cutlets making sure it’s sticking on firmly.
Put
the cutlets onto a rack in a baking dish.
Bake
for 1 hour in a moderate oven or, until the cutlets are cooked.
