PRAWN
BALLS RECIPE

g (1 lb.) green prawns

g (1/2 oz.) pork fat

thin slices white bread
Oil
for deep-frying
1/2-teaspoon
salt
1/2-teaspoon
sugar
1-teaspoon
corn flour
Pepper
Use
day old bread because it slices well.
Remove
the crusts from bread and cut into 5 mm (1/4 in.) slices then cut the slices
into 5 mm (/4 in.) cubes.
Finely
chop the pork fat.
Using
the side of cleaver mash the prawns and combine the pork fat and prawns.
Add
salt, sugar, corn flour and pepper and stir until combined.
Take
teaspoonfuls of the prawn mixture and, with two teaspoons shape the mixture
into even shaped balls.
Drop
the balls into bread cubes.
Roll
each ball over bread cubes to coat evenly and shake in the palms of hands to
shape and get rid of excess bread cubes.
Heat
the oil and deep-fry the balls until golden brown - fry a few at a time and
turn occasionally to brown evenly.
Remove
and drain on absorbent paper
