LAMB KEBABS

lamb leg chops

red peppers

g (4 oz.) mushrooms

pineapple
MARINADE
1/4
cup oil
1/4
cup bottled French dressing
2
tablespoons chopped mint
1
clove garlic
Salt,
Pepper
2
tea spoons sugar
Remove
meat from bones, cut off excess fat and cut meat into 2.5cm (1 in.) cubes.
Cut
peppers in half, remove the seeds, cut into 2.5cm (1 in ) cubes;
Slice
mushrooms in half.
Peel
pineapple, slice, remove core, cut into 2.5 cm (1 in.) cubes.
Thread
lamb, peppers, pineapple and mushrooms alternately on bamboo skewers, brush
well with marinade and stand 1 hour, brushing frequently with marinade.
Cook
kebabs over barbecue or under grill, brushing frequently with marinade until
cooked and golden brown.
MARINADE:
Crush garlic, combine with all remaining ingredients.
Makes
approximately 8 kebabs.
