PRAWNS RECIPE

kg (2 lb.) prawns
60
g (2 oz.) butter
1
tablespoon curry powder
2
sticks celery
1
large onion

green pepper

medium tomato

tablespoons flour
Salt,
pepper

cups water
1
cup milk
2
chicken stock cubes
1
teaspoon sugar
1
tablespoon lemon juice
Shell
and de-vein the prawns.
Melt
the butter, add curry powder, chopped celery, onion and pepper and sauté
gently for 2 to 3 minutes.
Peel
and chop the tomato, add to pan and cook for a further 2 minutes.
Stir
In the flour, salt, pepper and cook for 1 minute.
Gradually
add water and milk; add crumbled stock cubes and continue stirring until the
sauce boils and thickens.
Reduce
the heat, add sugar and lemon juice and simmer for 20 to 25 minutes while
stirring occasionally.
Add
the prawns and allow to just heat through.
Serve
with hot rice.
