CHICKEN WITH LEMON RECIPE

Chicken With Lemon Chinese recipe

 

1.5 kg (3 lb.) chicken

4 tablespoons soy sauce

1-teaspoon salt

2 teaspoons dry sherry

I teaspoon grated green ginger

3 tablespoons brown sugar

2 tablespoons water 

Remove the fat from inside the chicken and rub the chicken all over with the salt.

Combine soy sauce, dry sherry and ginger in pan, roll the chicken in the sauce and brush sauce into the chicken cavity to coat thoroughly then leave it in the marinade for 3O minutes turning it occasionally.

Heat the sauce and chicken over a low heat; turn the chicken r over to color evenly on all sides.

Place the chicken fat into a separate saucepan and place the chicken on top of the fat; this stops the chicken sticking to the saucepan.

Top the chicken with sliced lemon, sprinkle brown sugar over the lemon, then pour in the sauce and water and bring to the boil.

Cover, then reduce the heat and simmer gently for 45 minutes and baste with the sauce occasionally

Serves 4
