CHICKEN WITH CRAB RECIPE

Chicken With Crab Chinese Recipe

 

1 kg (2 lb.) chicken

 2 teaspoons soy sauce

2 tablespoons honey

Oil for deep-frying

 

Put chicken in large pan of boiling salted-water, cover tightly and stand for 30 minutes.

Remove the chicken from pan, drain and pat dry.

Combine honey with soy sauce and rub the mixture well over chicken.

Hang to dry for at least 4 hours or, refrigerate overnight, uncovered.

Cut the chicken in half length-ways.

Heat oil in pan and deep-fry the chicken gently, one half at a time, until golden and completely cooked through.

Cut the chicken into small pieces, Chinese-style.

SAUCE

125 g (4 oz.) crab meat

1 egg white

1-cup chicken stock

¼ teaspoon sugar

2 teaspoons dry sherry

1-teaspoon corn flour

Salt, pepper

2 teaspoons oil

Heat the oil in a pan, add combined chicken stock, sugar, dry sherry and corn flour, then stir until the sauce boils, then add the crab meat and stir until sauce thickens, season with salt and pepper.

Add egg white, then remove from heat immediately and stand for 1 minute or, until the egg white sets, stir quickly to mix the egg white through sauce.

Spoon the sauce over chicken.
