CHICKEN
WITH CASHEWS RECIPE

g (8 oz.) roasted unsalted cashew nuts

g (8 oz.) chicken livers

teaspoons oyster sauce

teaspoon sugar

cup chicken stock
1-teaspoon
corn flour
Cook
cleaned chicken livers in boiling salted water until cooked –approximately 5
minutes. Drain, cut into 2cm (3/4 in.) cubes
Bone
the chicken breast, remove skin and cut the meat into 2 cm (¾ in) pieces.
Combine with green ginger, salt and sugar and mix well.
Peel
the onion; remove stems from mushrooms. Cut onion, mushrooms, red and green
pepper and celery into 2cm (¾ in.) cubes.
Heat
2 tablespoons of oil in pan, add all vegetables and extra salt, and stir for 5
minutes then remove from pan.
Heat
the remaining oil in pan, add the chicken, cook, stirring, until the chicken
changes colour, add chicken livers and vegetables and toss well.
Add
combined oyster sauce, sugar, chicken stock and corn flour and stir until the
sauce boils and thickens.
Add
the cashew nuts and mix well.
Serves
4 to 6.
