CHICKEN
IN RED WINE STEW RECIPE

chicken legs (or chicken pieces)
2
teaspoons salt
1-tablespoon
paprika
1/4-teaspoon
thyme
1
bay leaf
¾
cup dry red wine
1-cup
water
Salt.
Pepper
V2
cup tomato juice
Chopped.
Parsley
Mix
salt and paprika and rub the mix well into chicken pieces.
Place
chicken under the griller and cook until brown on both sides.
Remove
chicken from the griller and place in ovenproof dish.
Add
thyme, Bayleaf, wine and water.
The
cook, covered, in moderate oven for 1 hour or until chicken is tender.
Place
the chicken onto a serving dish and keep warm.
Pour
the juices into small saucepan, add tomato juice, salt and pepper then heat
gently and pour some of the sauce over chicken.
Garnish
with chopped parsley.
