CHICKEN
IN BEER RECIPE

kg (3 lb.) chicken (or chicken pieces)
Flour
Salt,
pepper

g (3 oz.) butter

Onion

- (26 oz.) bottles beer
Joint
chicken and toss in flour seasoned with salt and pepper.
Heat
butter in frying pan, add chicken pieces, brown well then remove from pan.
Pour
off the surplus fat, leaving 2 tablespoons in pan.
Add
peeled and finely chopped onion and sauté until golden brown,
Add
the beer and bring to boil.
Place
the chicken into a flameproof dish and pour over the beer. Note: There should
be enough beer to cover chicken, if not it may be necessary to add another
half-bottle.)
Bake
uncovered in a moderately hot oven for 30 minutes.
Remove
the dish from oven and place it over a direct heat to evaporate liquid until
the sauce is reduced and thickened.
Note:
If a flameproof dish is not available then return the chicken and sauce into a
frying pan to evaporate the liquid.
