CACCIATORE RECIPE

kg (3 lb) chicken (or chicken pieces)

g (15 oz.) can whole tomatoes

g (2 oz.) mushrooms

bay leaf

large onion

cup red wine
2
cloves garlic
Salt,
pepper
1-tablespoon
oil
Slice
the mushrooms and onion and crush the garlic.
Joint
the chicken, heat the oil in the pan and fry the chicken pieces until golden
brown.
Remove
the chicken pieces from the pan and drain well.
Add
onion, mushrooms and garlic to the pan and sauté until the onion is tender.
Return
the chicken pieces to pan, add un-drained, mashed tomatoes, bay leaf and wine.
Cook
slowly and covered for 45 minutes, or until the chicken is tender.
Season
with salt and pepper.
Remove
the bay leaf.
