BEEF IN BLACK
BEAN SAUCE RECIPE

g (11/2 lb.) round or rump steak

soy sauce

teaspoons corn flour, extra

chicken stock cube

shallots or spring onions
Trim
Meat and cut into thin slices.
Mix
meat with sherry, soy sauce, corn flour, sugar and finely chopped green
ginger.
Allow
to stand for 30 minutes.
Heat
oil and quickly fry the meat until browned, then remove from pan.
Rinse
the pan.
Heat
extra oil, and then sauté the peeled and quartered onions (thinly-sliced),
the drained bamboo shoots, the celery sliced diagonally, and the pepper cut
into strips, for 2 to 3 minutes. Then remove from pan and place on serving
dish, but keep hot.
Place
the black beans in bowl and cover with boiling water - allow to stand 5
minutes.
Drain
the beans and mash well with crushed garlic.
Add
bean mixture to pan with combined water, sugar, corn flour and crumbled stock
cube.
Stir
until sauce boils and thickens, then add meat and heat thoroughly.
Spoon
over vegetables on a serving dish and garnish with thinly sliced shallots.
