BAKED SNAPPER RECIPE

 

Baked  Snapper Recipe

1 whole snapper (1.5 kg to2 kg) (3 lb. to 4 lb.)

1 tablespoon grated green ginger

1½ cups cooked rice

1-teaspoon soy sauce

1 stick celery

6 shallots or spring onions

Salt, pepper

½ cup chopped green pepper

1 large tomato

1 large onion, extra

90 g (3 oz.) butter

2 tablespoons finely chopped parsley

3 tablespoons lemon juice

Wash and scale fish.

Combine in a bowl the rice with diced celery, peeled and finely chopped onion, green pepper, salt and pepper and mix well.

Stuff the fish firmly with rice mixture and place in well-greased baking dish.

Melt butter in a pan, remove from heat and add lemon juice, ginger, soy sauce, chopped shallots, salt and pepper.

Pour over the fish and bake uncovered in moderately slow oven 40 to 50 minutes, or until fish is cooked.  Basting frequently with pan juices while cooking.

Peel extra onion and cut into slices and slice the tomato.

Halfway through cooking time, arrange the tomato and onion slices alternately over fish.

Place the fish on a serving plate when cooked, pour over the pan juices and sprinkle with parsley.

Serves 4.
