APRICOT
CHICKEN RECIPE

kg (3 lb.) chicken pieces

medium onions

g (2 oz.) butter

tablespoon corn flour
470
g (15 oz.) can apricot nectar
Salt,
pepper

g (4 oz.) dried apricots

green pepper

cup sour cream
Melt
the butter in a large, heavy pan and brown the chicken pieces well on both
sides, then remove from pan.
Add
chopped onions to pan and sauté until transparent.
Blend
corn flour into the apricot nectar, add to pan and stir until the sauce boils.
Reduce
the heat, season with salt and pepper and add dried apricots, cut in halves.
Return
the chicken to the pan, simmer slowly covered, stirring occasionally, until
chicken is tender.
Add
green pepper, cut into thin strips and cook for a further 5 minutes.
Stir
in sour cream and reheat gently
